Quick Vegan Green Sauce with Hemp & Spinach Tagliatelle

When your love of pasta still gives you all of your greens. The perfect, quick vegan tagliatelle.


  • 500g Hemp & Spinach Tagliatelle
  • 1 avocado
  • 1 cup coriander (large handful)
  • jalapeño or green chilli (to taste)
  • 2 cloves garlic
  • juice of 1 lime
  • 1/2 cup water
  • 1/2 cup olive oil
  • 1 teaspoon salt
  • 1/2 cup nuts (I used cashew)


  1. Pulse all ingredients (except nuts) in food processor – taste and season.
  2. Add nuts and pulse until just chopped or smooth if you prefer less texture.
  3. Cook pasta in plenty of salted boiling water, drain and serve with sauce and extra coriander.

Note: Leftover sauce is great with any pasta or used as a dip or dressing.
