Kumara & Horopito Gnocchi with Chorizo

Ingredients

  • 500g Pasta Vera Gnocchi – Kumara and Horopito
  • 2 tbsp olive oil
  • 200 g chorizo chopped
  • 2 cloves Garlic chopped
  • 1/2 Red onion chopped
  • 2 x tins chopped tomatoes
  • 2 tablespoons tomato paste
  • 2 tsp dried oregano
  • 2 teaspoons smoked paprika
  • Salt and pepper
  • Grated parmesan to grill and serve

Method

  1. In a large frying pan, heat the olive oil over medium-high heat.
  2. Add the chunks of chorizo and sauté for 3-4 minutes, or until they start to brown.
  3. Add the gnocchi and finely chopped red onion to the pan. Cook until the onions become soft and translucent, stirring occasionally. This should take about 5-6 minutes.
  4. Stir in the minced garlic and cook for an additional 2-3 minutes until it becomes fragrant.
  5. Add the canned chopped tomatoes, dried oregano, smoked paprika, and tomato paste to the pan. If the mixture seems too dry, you can add a splash of water to achieve your desired sauce consistency. Mix everything well.
  6. Allow the mixture to simmer for 5-6 more minutes, or until the gnocchi becomes soft and tender but still holds its shape. Continue stirring occasionally to ensure even cooking.
  7. While the gnocchi is cooking, preheat your grill.
  8. Once the gnocchi is ready, sprinkle grated Parmesan cheese over the top.
  9. Place the pan under the grill until the cheese is golden and bubbling, typically for 2-3 minutes. Keep a close eye on it to prevent burning.
  10. Serve your sautéed chorizo and gnocchi hot, garnished with extra Parmesan cheese and accompanied by a side salad for a balanced and delightful meal.
