Ingredients
500g Pasta Vera Fresh Linguine
2 cans of tuna in olive oil (drained)
3 cloves garlic (minced)
Zest and juice of 1 large lemon
1 small chili or a pinch of chili flakes (optional, for a bit of heat)
1/2 cup fresh parsley (chopped)
1/4 cup extra virgin olive oil
Salt and pepper to taste
Grated Parmesan cheese (optional)
Method
Cook the Linguine:
Bring a large pot of salted water to a boil and cook the linguine according to the package instructions until al dente. Reserve about 1/2 cup of the pasta water, then drain the pasta.
Prepare the Sauce:
While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the minced garlic and chili (if using), and sauté for about 1-2 minutes until fragrant but not browned. Add the drained tuna and gently break it apart in the pan. Let it warm up for 2-3 minutes.
Combine:
Add the cooked linguine to the pan with the tuna, and toss everything together. Add the lemon zest, lemon juice, and fresh parsley, and season with salt and pepper. If the pasta seems dry, add a splash of the reserved pasta water to loosen it up.
Serve:
Toss everything to combine, and serve immediately with a drizzle of olive oil and a sprinkle of Parmesan cheese (optional).
