Tortellini Herb & 4 Cheese in a Lemon Garlic Sauce
Why have one cheese when you can have four! Balanced perfectly with a fresh lemon sauce.
600g Herb & 4 Cheese Tortellini
1 cup of cream
2 cloves garlic – crushed
Zest and juice of 1 lemon
Olive oil (splash)
1 Tablespoon butter
Salt and pepper
Basil or Parsley to serve
Bring a pot of salted water to the boil, add in the Tortellini and refer to the packet for cooking instructions. Once cooked, drain the Tortellini and remember to save one cup of the cooking water.
In a pan, heat a combination of oil and butter. Be cautious not to overcook the garlic; it should be fragrant but not browned.
Add the zest and juice of a lemon along with the cream to the pan. Let the mixture simmer gently, and season it with your preferred seasonings.
If the sauce becomes too thick and creamy for your liking, you can adjust the consistency by adding some of the reserved cooking water.
To serve, plate the Tortellini and pour the creamy lemon sauce over them. Finish by sprinkling grated Parmesan cheese and fresh herbs on top.
