Liven things up with a zesty lemon twist and creamy Parmesan goodness.
500g Pasta Vera Spinach Gnocchi
120g fresh baby spinach
Juice of half a lemon
3/4 cup cream or sour cream
1/4 cup parmesan cheese
2 cloves garlic – finely chopped
1 tbsp olive oil or butter
Heat a pan over medium heat and add a mixture of oil and butter. Sauté minced garlic until it becomes fragrant and lightly golden.
Add fresh spinach to the pan and cook briefly until it gently wilts.
Meanwhile, in a separate pot, bring salted water to a boil. Follow the package instructions to cook the gnocchi until they float to the surface.
Incorporate a dash of zesty lemon juice, half of the grated Parmesan cheese, and the cooked gnocchi into the pan with the garlic and spinach. Let everything simmer together, adding cream until the mixture is warmed through.
Just before serving, sprinkle with lemon zest and Parmesan cheese. Season to taste with salt and pepper. Enjoy!
