Try this easy prawn, chilli and garlicky Pasta Vera Linguine for a speedy midweek meal.
Ingredients
500g Pasta Vera linguine
3 tbsp olive oil
4 cloves garlic
½ Red Chilli – finely sliced
Lemon zest and juice of one lemon
1/2 glass white wine (optional)
1/2 tsp salt
Freshly ground black pepper
Defrosted or fresh Prawns
Parsley
Method
Cook the Pasta Vera Linguine in a large saucepan of salted boiling water, according to packet instructions or until al dente. Drain well and return to pan.
Meanwhile, heat 2 tablespoons of the olive oil in a large frying pan over a medium heat. Add the garlic, chilli flakes, lemon zest and salt, cook stirring for 30 seconds or until aromatic.
Add the prawns and cook stirring occasionally for 2 minutes or until they are just cooked through.
Add wine and simmer until reduced by half (if not using wine add a little more lemon juice) Remove from heat.
Add the prawn mixture to the hot pasta with lemon juice and remaining olive oil toss until well combined.
SERVE : Serve immediately with freshly ground black pepper and parsley.
