500g Pasta Vera Fresh Tagliatelle
3 tbsp of olive oil
1 small onion, finely chopped
Parmesan
3 tsp of black garlic
1 cup of cream
1/2 bag of fresh spinach
Salt and pepper and basil to serve
Fill a large pot with water and bring to the boil. Add plenty of salt then drop in the fresh pasta and cook for 2-4 minutes.
Sauté the onion in a little oil till soft and golden. Stir in the black garlic paste and cream and simmer till slightly reduced.
Add in the pasta and mix well to coat, add spinach and cook till just wilted.
Season with salt and pepper and add a handful of parmesan.
Serve topped withextra parmesan and basil.
