Casarecce Pasta Salad with Roast Vegetables
A yummy winter pasta salad with seasonal veggies! We tossed our Pasta Vera Casarecce with pumpkin, kumara, red onion, and yams.
Pasta Vera Casarecce
Vegetables of your choice chopped/cubed to a similar size
Chives or and fresh herbs
Salt and pepper
Preheat your oven to 180°C. Toss a variety of vegetables with olive oil, salt, and pepper on a baking tray. Roast them until they become tender and golden.
While the vegetables are roasting, bring a pot of salted water to a boil. Add the Casarecce Pasta and cook until it’s al dente. Drain the pasta and rinse it under cold running water until it cools.
Once the roasted vegetables are ready, mix them with the Casarecce. Add your preferred Italian dressing, some fresh herbs, and crumbled feta cheese for a tasty finish.
