This creamy pasta dish is packed with crispy bacon, caramelised onions, and melted brie, making it the perfect comfort food for any night of the week!

Ingredients
200g Pasta Vera Pappardelle
4 pieces streaky bacon
½ onion thinly sliced
2 cloves garlic – crushed
125g Brie cut into cubes (cut off rind if you prefer)
Basil and or Parsley
Salt and Black Pepper to taste
½ cup pasta water – reserved
Squeeze of lemon juice to taste
Method
Bring a large pot of water to a boil and cook the pasta according to package instructions. Reserve 1 cup of pasta water, then drain and set the pasta aside.
In a large frying pan, cook the bacon until crispy. Remove and place on a paper towel to cool, then chop into small pieces.
Using the same pan, sauté the sliced onion in the bacon fat over medium-high heat until caramelised, about 5 minutes. Add the garlic and cook for 30 seconds until fragrant.
Add the cubed brie to the pan along with ½–¾ cup of reserved pasta water and a few squeezes of lemon juice. Stir until the cheese melts into a creamy sauce.
Toss the drained pasta with the sauce, then mix in the bacon and fresh herbs. Taste, adjust seasoning, and serve warm.
